Sweet Potato Biscuits

Ingredients

1
cup of mashed, cooked sweet potato
1/4
cup of sugar
1
beaten egg
1
tbsp. of margarine or butter, melted
1
cup of milk
3
cups of self-rising flour
1
tsp. of baking powder
1/2
cup of shortening

Directions

1.
In a medium bowl, mix together sweet potato, sugar, egg, and butter until smooth.

Stir in milk and set aside.
3.
Sift together together flour and baking powder into a large mixing bowl.
4.
Cut in shortening until mixture resembles coarse crumbs.
5.
Make a well in the center of dry mixture.
6.
Add sweet potato mixture and stirt until just combined.
7.
Turn out onto a well-floured surface. Knead gently for 10 to 12 strokes.
8.
Roll or pat dough to 1/2-inch thickness.
9.
Cut with a floured 2-1/2-inch biscuit cutter.
10.
Reroll as necessary.
11.
Place biscuits 1 inch apart on a large baking sheet.
12.
Bake at 400 degree F for 15 to 20 minutes or until lightly browned.
