Ingredients

large onion, chopped (about 2 cups)

cups chopped cabbage (to save time, use packaged slaw mix)

to 4 cloves garlic, minced

14 1/2-ounce can tomato wedges or diced tomatoes, undrained

18-ounce can sweet potatoes, drained and chopped
1/4
to 1/2 tsp red pepper flakes

cups frozen cut green beans

to 2 tsp grated fresh ginger root

cup natural peanutbutter
Directions

1.In a large skillet, heat oil over medium heat.

2.Add the onion, stir and cook for about 5 mins.

3.Add the cabbage and garlic and mix.

4.Cook until cabbage is tender and crisp or for about 5 min.

5.Stir in tomatoes, sweet potatoes, apple juice, pepper red flakes and ginger.

6.Reduce the heat to medium low and cook with cover.

7.Simmer until bubling for about 6 min.

8.Add the green beans then simmer without cover for 5 min.

9.Add peanut butter and blend well and wait for the mixture to be hot or for about 1 min.

10.Serve soup with any crusty or crispy bread with a salad. You can also add rice or mashed potatoes.
