Directions

Cook your pumpkin in an uncovered pot of water until all the water is evaporated.

Beat eggs and add to pumpkin, mix.
3.
Add the flour, salt, baking powder, and sugar.

Beat well to make a soft batter, if you have a food processor, use it to make the batter.
5.
Heat the oil to medium heat in a heavy frying pan.
6.
Drop a spoonful of batter carefully into the oil.
7.
When the fritter is turning light brown, flip it.
8.
Make sure to leave enough space between the fritters so they can enlarge.
9.
Take them out when they are golden brown.
10.
Put the fritters on the plate with paper towels to absorb the extra oil.
11.
Place the fritters on serving plate and sprinkle with sugar and cinnamon.
