medium butternut squash (sliced in half)

cup mini marshmallows
Directions

Slice butternut squash length wise. Scoop out and discard seeds. Lightly spray each half with olive oil (just to coat). Place 2 tablespoons of butter in each half. Sprinkle brown sugar and cinnamon on top. Place squash in a 400 degree oven for 20-25 minutes until squash is tender.

For extra sweetness, you can add some mini marshmallows to each half during cooking time. I would suggest adding the marshmallows at the 15 minute mark to ensure they don't burn.
