slices white bread, crust removed

tbsp finely minced yellow onion

cups extra virgin olive oil
Directions
1.
Toast the bread, soak in water until very soft, then squeeze dry.
2.
Process roe in a blender at low speed until creamy.
3.
Add onion and bread and continue blending.
4.
With blender running, slowly and alternately add olive oil and lemon juice.
5.
Increase blender to high speed and blend until mixture is light in color and creamy.
