boneless skinless chicken breasts, cut in small pieces
1-2
med zucchini cut into small pieces
1tbsp green curry paste (more if you like it spicy)
4-5
thai basil leaves (crush in hand to release flavor)
2-3
lime leaves ( zest of 1 lime can be used)
Directions

Add oil to pan and heat to med low. Add Curry paste and cook till it smells good. Add coconut milk and cook on med till thin film appears on top. Add chicken and zucchini, fish sauce, sugar, and leaves. Cook until chicken is done and zucchini is tender. Add peas and cook for 3 min. Serve over white rice. Jasmine works really well, and tastes great!!
