stalk celery, chopped very fine

small onion, chopped very fine

large hard boiled eggs, chopped

slices deli sliced corned beef

cup sauerkraut, drained
Directions

Mix mayo, celery, onion, ketchup and hard boiled eggs together, cover and refrigerate.

Preheat a large skillet on medium heat.

Lightly butter one side of the bread slices.
4.
Spread non-buttered sides with thousand island dressing.
5.
On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese.
6.
Top with remaining bread slices, buttered sides out.
7.
Grill the sandwiches until both sides are golden brown, about 15 minutes per side. Serve hot.
