Description:

3-cup chicken is a traditional Taiwanese recipe. It's easy to make and comforting. The leftovers are delicious. Save the sauce for the next time. The traditional recipe calls for 1 cup each of rice wine, sesame oil and soy sauce. For obvious health reasons, I reduce the amount of soy sauce and rice wine. I also use light soy sauce. Modify to your preference. Some people also add chili peppers to this recipe although it's not done in my family. Serve this dish over steamed rice.

Ingredients

lbs. chicken thighs and legs
1
c. rice wine
1/2
c. sesame oil
1/2
c. soy sauce
1
c. white button or shitake mix mushrooms
sliced ginger
Chinese basil

Directions

1.
1. Preheat pan.
2.
2. Fry sliced ginger in vegetable oil.
3.
3. Chop meat into 2- to 3-inch sections and brown in pan.
4.
4. Add white wine, sesame oil, and soy sauce.
5.
5. Add enough water to cover the chicken.
6.
6. Cover and let simmer on low heat for 30 minutes.
7.
7. Stir occasionally to make sure the chicken is cooked.
8.
8. Add mushrooms and Chinese basil and cook for 5 more minutes.
9.
9. Serve over rice.
