Ingredients

1/2 tbsp extra-virgin olive oil

tbsp champagne wine vinegar
1/4
tsp fresh-squeezed lemon juice
1/2
tsp sea salt (fleur de sel)
Few grindings of black pepper

big bunches of Organic greens & 6 big shavings of Parmigiano Reggiano
Directions

Scrub potatoes and cute into cubes

Boil potatoes for about 10mins until tender and not mushy.
4.
While potatoes are boiling make dressing. Drizzle over potatoes. You can also use dressing with Greens and shaved Parmigiano-Reggiano!
