Turkey and Feta Meatballs

Description:

A healthy new twist on the traditional meatball!

Prep:

20 minutes prep, plus 40 minutes cook time

Ingredients

 1 TB Dijon mustard
 1 TB minced sun-dried tomatoes in oil, drained
 2 tsp dried tarragon
 1 tsp. onion powder
 ½ tsp dried garlic
 1 egg, lightly beaten
 Salt and pepper
 1 lb. lean ground turkey
 1/2
cup feta cheese
 Olive oil for frying

Directions

1.
Line a large shallow baking pan with foil; oil lightly.
2.
Combine all ingredients but turkey, cheese, and oil. Add combined ingredients to turkey using hands – handling as little as possible to keep tender.
3.
Tear off pieces to form meatballs about 1 1/2 to 2 inches in diameter. Stuff center of each meatball with feta (about ½ tsp); shape a meatball around the cheese. Brush or drizzle prepared meatballs with olive oil.
4.
Broil the meatballs about 8 inches from the heat source for about 10 minutes. Turn and broil for 10 minutes longer.
5.
Put the meatballs in a large saucepan and cover with your favorite pasta sauce, homemade or purchased. Cover and simmer for 20 to 30 minutes. Serve hot.
