Twice Baked Potatoes with Rotisserie Chicken

Description:

A good way to use store-bought rotisserie chicken. Serve with a salad. I use prepared bacon pieces and jarred jalapenos for this recipe.

Ingredients

large baking potatoes

cups shredded rotisserie chicken

Tbs butter
1/4
cup sour cream
1/4
cup cheddar cheese
1/4
cups sliced green onions
2
Tbs bacon pieces
2
Tbs diced jalapenos
Paprika

Directions

1.
Bake the potatoes in a 350-degree until done (about 1-1/4 to 1-1/2 hours). Let cool for 15 minutes.
2.
Slice the top off the baked potatoes and scoop the potato out of the shell. Place the shells in a baking sheet and set aside.
3.
Mix the remaining ingredients with the potato pulp and place the mixture in the shells. Sprinkle with paprika.
4.
Place the baking sheet in a 350-degree oven and bake for about 30 minutes are until the top of the potatoes are brown.
