Vegan potato Pickle Winter Salad

Description:

This is a winter salad that takes its inspiration from Central Europe. It is a good accompaniment to other salads. If it is used as a main dish, make sure you have enough walnuts sprinkled upon it to provide the necessary protein which you need.

Ingredients

* 8 medium potatoes, unpeeled
* 1 medium onion
* 2 medium cooked pickled beetroots
* 2 medium gherkins
* 1 small bunch mint
* 1 small bunch parsley
* 3 tsp of vinegar
* 8 tbsp of oil
* Salt and pepper to taste
* A small handful of broken walnuts, to serve.
* Salt and pepper to taste.

Directions

1.
1. Cook the potatoes in boiling water till soft. Cube them.
2.
2. Chop the onion finely and cube the beetroot and the gherkins.
3.
3. Chop the mint and parsley finely.
4.
4. Combine all these in a bowl.
5.
5. Put the vinegar, oil and salt and pepper into an empty jar. Put the lid on the jar and shake it until the mixture is combined into a dressing. Pour this over the rest of the ingredients.
6.
6. Leave unchilled for about an hour.
7.
7. Sprinkle with broken walnuts to serve.
8.
8. This should be served at room temperature.
