Description:

This is my mom's recipe but I veganized it for a vegan potluck that I attended and it was a huge hit. I now make it this way all the time as I actually prefer it. I also make it with multiple types of fruit, instead of just one like my mom did.

Prep:

25-30 mins to bake plus prep time

Ingredients

1/2
cup vegan sugar

tbsp cornstarch

cups peeled/sliced fresh peaches

cups blackberries

tsp lemon juice

tsp vegetable shortening
1
tbsp sugar

1/2 tsp baking powder
1/2
tsp salt
1/2
cup soy milk
1/4
tsp cinnamon

Directions

Heat oven to 400 degrees.

Fruit:

Mix 1/2 cup sugar and cornstarch in pan. Add fruit and lemon juice. Cook until boiling and thickens, stirring all the time. Boil for 1 minute. Remove from heat and pour into 2 quart casserole dish and place in preheated oven.

Cobbler:

Mix shortening and flour, 1 tablespoon sugar, baking powder, salt, and cinnamon until is crumbly. Stir in soy milk until mixed and pasty.

Remove fruit from oven. By tablespoon, drop cobbler dough on top of fruit in six places. Place back into oven and bake for 25-30 minutes. Serve warm.
