Ingredients
* The rind of 1 lemon, finely grated
* 375 grams (12 ounces) cooked white rice, cold.
* The juice of 1 lemon, squeeze
* 1 bunch of fresh mint, chopped finely
* 375 grams (12 ounces) French beans or thin green beans, chopped into lengths of about 3 cm (1 inch)
* 375 grams (12 ounces) broad beans, fresh or frozen,
* 1 bell pepper, red or orange, thinly chopped
* 50 grams (2 ounces) brazil nuts, roughly chopped .
* Salt and pepper to taste
Directions

1. First, put the wild rice in a bowl with 8 tablespoons of water. Bring to the boil (preferably in the microwive) and boil for 5 minutes. Cover, and set aside.

2. Place both kinds of beans in a pan. Barely cover with water. Bring to the boil. Boil for 2 minutes. Drain and cool.

3. Toast the brazil nuts briefly under the grill, watching all the time and turning them with a fork as soon as they start to become brown.Cool

4. Mix all the ingredients together, adding salt and pepper to taste.
