Description:

Bubble and Squeak is a popular British dish ideal for using up left over cooked potato and cabbage. It is usually made with bacon or ham but you can do a delicious vegan version using French mustard and walnuts

Ingredients

* 225 grams (8 ounces, 1 cup) cooked potato, mashed
* 225 grams (8 ounces ¾ cup) cooked cabbage.
* 1 small onion, chopped
* 2 tbsp all purpose flour
* 1 tbsp olive oil
* 1 tsp French mustard
* 3 tbsp chopped walnuts
* Fresh rosemary leaves, if available, otherwise dried rosemary.
* Salt and pepper to taste
* Vegetable oil to fry

Directions

1.
1. Mix all the ingredients together thoroughly and form into small burger shapes.

2. Heat the oil in a non stick pan and fry the burgers on both sides over a medium heat. They may break up during cooking but if so just continue to fry the mixture and serve it broken - bubble and squeak is often served in that way.

3. When the mixture is cooked through and browned, serve garnished with a sprig of rosemary.
