oz spinach (fresh or frozen)
1/4
tsp pink himalayan salt
Directions

Preheat the oven to 350 F.
2.
In blender combine the spinach, tofu, milk, basil, salt, pepper, nutmeg, celery seed and turmeric until it looks like scrambled eggs.
3.
Mix in bowl with couscous.
4.
Spray a small cast iron pan with the spray.
5.
Spread the mixture on the bottom of the pan so it is together.
6.
Bake 20 minutes (your oven may take a bit longer).
7.
You can serve this by itself or with a tortilla with salsa.

I like to add cilantro or fresh basil to the finished product,.
