Ingredients

medium potatoes (boiled and then peeled)
1kg carrots (peeled & boiled)
1kg parsnips (peeled & boiled)
800g frozen green peas (boiled) or even better 2 large tins of non flavoured and non coloured peas (about 700g)
2
large tins of sweet corn (about 500g drained)
large tin of kidney beans (about 240g drained) – optional
400g cucumbers in brine / fermented cucumbers (about 10-12 medium cucumbers)

medium apples (about 700g)
600g jar of mayonnaise
grinded pepper corns
salt
mustard (I used whole grain mustard)

eggs (hard boiled) – optional

Directions

1.
First chop cucumbers and mix them with chopped apples so they won’t get brown.
2.
Then chop and stir other ingredients, leave carrots, parsnips and potatoes at the end not to stir them too much.
3.
Season with pepper, mustard and salt.
4.
Serve with eggs aside or mix them into the salad.
