Description:

When I was still a meat-eater, I used to love the skillet breakfast meals they made at Bob Evans Restaurant. After becoming a vegetarian, I could no longer eat those. Therefore, I created my own homemade vegetarian version! Enjoy!

Ingredients

6
eggs
6
large red potatoes
milk
cheddar cheese
salt and pepper
fake sausage (made with soy)
olive oil
butter

Directions

1.
Dice potatoes into small chunks. Put into greased pan and fry until soft and browned. Set aside. Mix eggs as if you are going to scramble them for omelets with milk, salt, and pepper to taste. In pre-heated pan, pour 1/2 the egg mixture into a buttered pan. Make an egg cake (like an omelet but stays flat don't fold over). Once done (you will flip it once), sprinkle with shredded cheddar cheese and put on dinner plate. Put 1/2 of the fried potatoes on top of each egg cake. Take soy sausage and cook per instructions. When done, crumble sausage on top of the potatoes. Sprinkle with more cheese. ENJOY!
