Ingredients

hard boiled egg chopped (leave out for vegans)
1/3
c mayonnaise (you can use soy mayonnaise to make this vegan)
White wine vinegar for acidity
Your favorite sliced bread
Directions
1.
Drain tofu on a kitchen towel to remove extra moisture.
2.
Make sure there is almost no water left otherwise the salad will be soggy.
3.
In a large bowl mix the tofu with the rest of the ingredients.
4.
Chop the tofu with a fork so it crumbles and mixes with the rest of the ingredients.
5.
Taste it and add more seasonings if you like.
7.
Put the mixture inside the bread and eat.
