Description:

If you're going vegetarian, this is a must in your dining repertoire. The beans will give you all the protein you need. This recipe also tastes better the next day, so make sure to leave some.

Ingredients

quarts water
1
cup dried split peas
1
large onion
3
small potatoes
1
lb can of tomatoes
1/2
tsp oregano
1/4
tsp basil
1
bay leaf
thyme
2
peppercorns
1
clove
2
carrots
1/4
head of cabbage
1/2
lb escarole
1
cup cooked kidney beans
1
cup cooked garbanzo beans
1
cup elbow macaroni
salt to taste

Directions

1.
Chop the onion
2.
Chop the carrot
3.
Chop the escarole
4.
Slice the cabbage
5.
Rinse the split peas
6.
Fill a large soup pot with 2 quarts of water
7.
Bring to a boil and add onion, potatoes, tomatoes, herbs and spices
8.
Cook until potatoes are soft
9.
Add the carrots and cook until the carrots are tender
10.
Add the cabbage and escarole
11.
Add the elbow macaroni and canned beans and cook for 10 minutes
12.
Have some extra water heating on the side just in case the soup reduces too much
13.
You can use dried beans, but soak them overnight, otherwise you will wait forever
