Description:

This is a vegetarian adaptation of a traditional Japanese recipe. The original recipe contains chicken and egg and the name translates roughly into English as "Parent/Child bowl." For those of us who don't want to eat once living creatures, this is a simple stir fry. It can be made vegan by not using eggs in the recipe.

Prep:

Approximately 20 minutes

Ingredients

1
box of instant rice (or comparable amount of steamed rice)
3
green onions
1
white onion
1
container of firm tofu

eggs
1
can of vegetable soup stock (dashi)

tbsp of soy sauce
2
tbsp of sugar

Directions

1.
*Prepare your rice however you see fit. The other ingredients will take about 20 minutes to make, so time it wisely.

1. Chop all onions into small bite size pieces.

2. Cut tofu into 1/4" squares.

3. Mix soup stock (dashi), soy sauce, and sugar into wok.

4. Heat for 5 minutes.

5. Add all onions and heat for an additional 5 minutes.

6. Add Tofu.

7. Heat for at least 10 minutes or until a large amount of the broth has been boiled off. The broth is for flavoring and this should not be a soupy dish.

8. Crack eggs into broth mixture and boil until cooked.

9. Pour broth mixture and eggs over individual servings of rice and enjoy!
