Ingredients

cup dried lentils (soaked overnight to make cooking faster)

carrots (peeled, washed and chopped)
1/2
lb mushrooms (your favorite kind) sliced
1
medium yellow onion, chopped
Directions
1.
In a large pot bring water to boil

Add the first 3 ingredients
3.
Cook for about 30 minutes (keep extra hot water on the side just in case the soup dries out too much)
4.
While this is cooking, heat the olive oil and sautee the the mushrooms and onions
5.
Add shrooms and onions to the soup
