Directions

Scrub and chop the potatoes

chop the onion and carrot
3.
Melt the butter and add first 3 ingredients
4.
Sautee them for a minute or so

Bring to a boil, add salt and cook for 30 minutes

Add the spinach and cook for a minute

Serve with a dollop of yogurt on top and sprinkle a little black pepper on top
