pounds seedless watermelon, cut into 1-inch cubes

Tablespoons fresh lime juice
Food Processor or blender
Directions
1.
Heat water and sugar over high heat until sugar is dissolved (aka simple syrup).

Let simple syrup cool.
3.
Take 1/2 watermelon and1/2 lime juice and chop in food processor. Keep doing this until it is smooth. Add the rest and repeat.
4.
Add simple syrup and process again.
6.
When frozen, take cubes and place in blender/processor and chop.
7.
Serve & garnish with sprig of mint.
