Prep:

Fry chicken then mix all ingredients then simmer for 1 hour

Ingredients

chicken thigh fillets, cubed
250g boneless chicken breasts, cubed
425g tomatoes
1
onion, chopped

tsp. of curry powder
2
tsp. of chicken stock powder
2
tbsp. of peanut butter
1
tbsp. of oil
1/2
green pepper, sliced

Directions

1.
Heat oil in a heavy pan and fry chicken and onion until golden.
2.
Add curry powder and cook for 1 minute, stirring continuously.
3.
Add remaining ingredients, bring to the boil.
4.
Cover and simmer for 20 minutes, stirring occasionally.
