Description:

I made up and revised this recipe this evening for dinner. It is a tilapia and potato/leek based cream chowder. It has your basic mirepoix and a bit of a zest from lemon and chives. I hardly ever truely enjoy my own cooking and am always very critical about revising and perfecting a dish. I am thoroughly satisfied with this recipe.

Ingredients

oz tilpia filet diced
8
oz potato medium dice 1/4 in
6oz onion small dice 1/8 in
3oz carrot small dice 1/8 in
3oz celery small dice 1/8 in
2oz leek thin slice
2
cloves garlic minced
1oz butter
3oz water
2oz lemon juice
1/2
oz lemon zest
6oz heavy cream
8oz milk
2oz cheese grated
S+P for taste
1oz chives sliced for garnish

Directions

1.
In a sauce pan combine water, butter, celery, carrots, onion, and garlic to boil. Add potatoe, leek, and lemon juice reduce heat to a simmer. When Vegetables are tender add cream, milk and tilapia. Cover for 3-5 minutes, stir in cheese. S+P to taste. Garnish with lemon zest and chives
