Description:

This is a real easy way to make perfect rice every time. It never fails me, but you have to go out and get a caldero, aka "Dutch Ovens", a staple in my kitchen. They are made of a thick cast aluminum, and are typically used to make rice and chicken, stews, and paella.

Ingredients

1
C Spanish Rice
2
C Water
1
T Olive Oil
1
Chicken Bouillon Cube
1
Scallion Stalk
Salt and Pepper to Taste

Directions

1.
Wash rice in colander to get rid of rocks or debris
2.
Put rice, water, olive oil, bouillon cube and scallion (cut in half) in caldero
3.
Stir with wooden spoon until Bouillon is dissolved
4.
Bring to boil over high heat
5.
When it reaches boiling, cover and bring heat to low
6.
Simmer covered for 30 minutes
7.
Turn off, throw out scallion and enjoy.
