Description: You will find these at every Italian Festival. Sprinkle them with either cinnamon sugar or with powder sugar for the ultimate treat.

Ingredients

T sugar

stick butter
1/4
tsp salt

C water
1
C all-purpose flour

eggs

tbsp vanilla extract
Olive oil, for frying

C sugar mixed with 2 T ground cinnamon or 1/2 C powder sugar

Directions

1.
In a medium saucepan combine the butter, salt, 3 tablespoons of sugar, and water over medium heat.

Bring to a boil.

Take pan off the heat and stir in the flour.
4.
Return pan to the heat and stir continuously until mixture forms a ball, about 3 to 5 minutes.

Transfer the flour mixture to a medium bowl.

Add vanilla extract.

Using an electric hand mixer on low speed, add eggs, 1 at a time, incorporating each egg completely before adding the next.

Beat until smooth.
9.
Pour enough oil into a large frying pan to reach a depth of two inches.

Heat the oil over medium heat until it reaches 375 F (be very careful not to burn yourself (having a deep fry thermomether helps to make sure temperature stays constant.
11.
Using a small spoon, carefully drop about a tablespoon of the dough into the hot oil, frying in batches.
12.
The zeppole will immediately float to the top and puff up. Turn the zeppole once or twice with a slotted spoon, cooking until golden and puffed up, about 5 minutes.
13.
Drain on paper towels. Toss with cinnamon sugar mix or dust with powder sugar.
