pounds green beans, trimmed

large red onion, cut into wedges

tbsp sherry or white wine
Directions

In a large nonstick skillet over medium heat, cook pine nuts until golden brown (about four minutes). Remove from skillet and set aside. In the same skillet, heat olive oil over medium-high heat. Add onion and cook until browned and tender (about ten minutes).

While the onions are cooking, steam green beans in a pot over high heat until they are tender (about eight minutes).

Add garlic, vinegar, sherry, mustard, salt, and pepper to the onions. Cook five minutes. Combine beans with onion mixture. Sprinkle with pine nuts and serve.
