Zucchini Stuffed With Shrimp

Description:

Zucchini is one of the healthiest veggies and it is hardly ever used. It has tons of fiber, it's good for your tummy and lowers cholesterol. Here is one of my fave recipes for the zuk.

Ingredients

small zucchini, blanched
1
tbsp olive oil
1
onion, chopped
1
garlic clove, chopped
4
tomatoes chopped
2
drops tabasco sauce (for flavor)
1
tsp thyme
9
oz cooked shrimp, shelled

Directions

1.
Preheat oven to 425F
2.
Halve the zucchini lenghtwise and scoop out the flesh.
3.
Save the shells.
4.
Chop the flesh.
5.
Heat the olive oil in a pan.
6.
Fry the onion and garlic.
7.
Add the tomatoes, zucchini flesh and flavorings and simmer for 10 minutes.
8.
Add the shrimp.
9.
Stuff the mixture into the zucchini shells and bake covered for 15 minutes
