Ingredients

lamb, cut into serving pieces
Potatoes - 6, peeled and quartered
Tomatoes - 1, crushed
Parsley - 2 Tablespoons
Basil - 1 tsp
Garlic - 2 cloves, minced
Salt - to taste
Pepper - to taste
Grated Parmesan cheese - 25 gm
oil - 3 Tablespoons

Directions

1.
First take chicken in a bowl, wash it thoroughly and wipe up it dry. Take sufficient oil in a large roasting pan so that it cover full base of the pan. Put chicken pieces in pan and then place potatoes in between the chicken pieces. Add tomatoes, parsley, basil, garlic, salt and pepper over chicken and potatoes. Finally, add some grated cheese and the oil. Bake in 375 degree F oven for about 75 min, or until chicken becomes dark brown. Take in to a bowl and it is garnished with some coriander leaves.
