Description:

growing up in oklahoma, mom made this on friday nights and it was a favorite. when i became a vegetarian, i modified the recipe and it's just as good. i always take this to potlucks & dinners, and it's a consistent hit with vegetarians and omnivores alike.

Ingredients

can biscuits (plain, stay away from the jumbo sizes)

tube fake sausage or beef (i like Gimme Lean brand)

tomato, sliced

can tomato puree
1
can tomato sauce
1/4
cup olives, chopped (black or green, whichever you prefer)
1/2
cup cheddar cheese, grated
1/8
cup olive oil

The Crust:

grease 12 x 12 baking dish, 2 inches deep minimum. pop open the can of biscuits and roll them out as wide as you can. piece the biscuits in pan to assemble the crust as much as you can, and make sure that the sides of the sheet are at least halfway covered. this process is kind of like putting together a greasy puzzle.

The Filling:

warm oil in skillet, then crumble sausage into pan. brown, turning and breaking apart often with spatula. when browned, stir in tomato puree, tomato sauce and olives. warm until blended well.

pre-heat oven to 350. pour filling over crust and flatten the top of the mixture. cover mix with cheese, then place 2-4 tomato slices atop cheese. cover pan with lid or aluminum foil. bake for 20-25 minutes, checking crust to make sure it's a light-medium brown. slice and enjoy, should make about 9 pieces.
