Description: Perfect for a cold day. Comforting and delicious, do not get put off by the ingredients.
Ingredients
- 1 Lb beef tripe per person
1 chopped tomato chopped
1 stalk scallions chopped
2 cubes chicken bouillon
2 Lb potatoes diced small
2 C rice
1 bag frozen peas & carrots
cilantro to taste
salt & pepper to taste
Directions
Mondongo:
Put tripe in a large stock pot in water with chicken bouillon.
Bring to a boil
Add scallion
Let it cook for 2 1/2 hours so that the tripe becomes tender.
Add potatoes, peas, carrots and rice
Let this cook for another 1/2 hour
Once all ingredients are tender the soup is ready
Chop cilantro and add as garnish (brings out the flavors of the soup)
