Description: Recipe given from an executive chef friend who works for a very famous Hotel. I can't disclose their name for reasons of job security.

Ingredients

    10.5 # Bread Flour
    3 qt. Water
    1.5 oz. Instant saf yeast (4.5 oz. Fresh yeast)
    3 oz. Koasher salt
    1.5 cups Olive Oil
    1 cup Honey

Directions

    Best Bread Ever Top Secret:

    1. Place all ingredients in a mixing bowl with a dough hook attachment.
    2. At slow speed mix all ingredients for 8 minutes.
    3. Place the dough in a large lightly oiled bowl. Cover and let rest for about 45 minutes to an hour.
    4. Portion out the dough to desired weight (2 oz. Rolls, 2 # loaves, 6 oz. Mini pizza).
    5. Shape the dough and let it rest for about 45 minutes to an hour continually spraying with water so crust does not form.
    6. Make egg wash with 2 eggs and .5 cup of milk. Brush the top of the bread with the egg wash using a paper towel.
    7. Cut a slit on top of the bread using a sharp razor blade.
    8. Using a fine mesh sifter or strainer dust the top of the bread with equal parts fine corn meal and flour.
    9. Bake the bread in an oven preheated at 400 degrees for about 15-20 minutes.
    10. Spray the bread with water every two minutes during baking.
    11. Remove from oven and let cool at room temperature. Store in a cool dry place.
