Description: I serve this all the time in during the fall, super delicious and so comforting.

Ingredients

    3 pounds of sweet potatoes
    1 1/2 cups sugar
    1 can evaporated milk
    2 eggs
    1 1/2 tsp nutmeg
    1 tsp vanilla
    1 stick of butter (room temperature)
    A sprinkle of cinnamon & ground cardamom if you are feeling saucy
    Pre-made uncooked pie shell.
    You will also need a food processor or a mixer if you want to skip the mashing.

Directions

    Sweet Potato Pie:

    Preheat oven to 400°F, I usually put it on broil first so I don't have to wait too long, then set the temperature.

    Boil the sweet potatoes with the skin on.
    To check for readiness, insert a knife, if it breaks easily, they are ready.

    Put the sweet potatoes in a strainer andpour cold water over them until they are cool to the touch.


    Beat the sweet potatoes in a mixer on medium speed.

    If you see strings, remove them.

    Add the room temperature butter and continue to mix.

    Add the rest of the ingredients. If you use the cardamom, go easy on it until you figure out how much you will like.

    When it has a good consistency, pour the mixture into a pie shell.

    Sprinkle a little cinnamon on top.

    Bake for 1 hour.

    When you see brown dots on the the top, it is ready.
