Description: Healthy and delicious and humane ;)

Ingredients

    1 carton firm tofu
    1 hard boiled egg chopped (leave out for vegans)
    1/4 cup celery chopped
    1/4 cup scallion chopped
    1/4 cup chopped parsley
    3 T dill chopped
    1/3 c mayonnaise (you can use soy mayonnaise to make this vegan)
    2 T mustard
    1 tsp paprika
    1/4 tsp tumeric
    White wine vinegar for acidity
    salt & pepper to taste
    Your favorite sliced bread

Directions

    Vegetarian Chicken Salad Sandwich:

    Drain tofu on a kitchen towel to remove extra moisture.

    Make sure there is almost no water left otherwise the salad will be soggy.

    In a large bowl mix the tofu with the rest of the ingredients.

    Chop the tofu with a fork so it crumbles and mixes with the rest of the ingredients.

    Taste it and add more seasonings if you like.

    Toast the bread.

    Put the mixture inside the bread and eat.
