    5 strips of applewood smoked bacon (diced)
    1/2 yellow onion (diced)
    5 cups of organic chicken broth (you can use 5 cups of water with 3 bouillon cubes if you don't have chicken broth)
    1 cup risotto rice (you can use regular white rice as a sub)
    1/2 cup dry chardonnay
    8 oz frozen organic peas
    shredded mozzarella cheese (to taste - you won't need much)
    Salt & ground pepper
    pork, onion, rice, pepper, organic, spirits

    1 pound of peeled potatoes
    6-10 cloves of minced garlic
    3/4 C of Greek extra virgin olive oil (I like spitiko brand)
    1/3 cup of white wine vinegar
    1 tablespoon of salt
    1/2 teaspoon of freshly ground black pepper

    Food processor

    Quantities can vary according to taste, I don't really measure for this one, and you can certainly change the quantities to adjust to your liking.
