Kajitsu serves Shojin cuisine--vegetable Kaiseki, a traditional Japanese culinary practice that is the very origin of Japanese cuisine. All of our dishes are prepared from fresh, season vegetables, legumes, wild herbs, seeds and grains, chosen at the moment in the season that best reflects their flavor.
