To put it bluntly: it's worth it.
As someone who used to frequent Bianco's old restaurant 10 years ago, and saw him through the changes, the pizza has always been quality. His secret? He uses fresh, local ingredients. I've had everything on the current menu and you really can't go astray. The antipasto is rustic and delicious. The "spiedini", baked cheese wrapped in proscuitto, also delicious. The appetizers, including the salad, are all choice picks. But the pizzas are what you waited four hours for, perhaps sitting and sipping at the co-owned bar next door. I recommend the Margherita. A rich tomato sauce topped with cheese and basil. It sounds simple, but simple is sometimes the best. My second favorite is the Bianco Verde. It's a "white pie", which means no tomato sauce. Rather, it's made with a garlic/olive oil "sauce", topped with cheeses and greens.
To put it short. Yeah, sure. It's been overhyped. But it's been overhyped for a reason -- it deserves it.
