Bistro 921 is in the Hilton downtown. The restaurant generally lives up to the hotel's standards. The service is always great, the food is above average and the prices are decent. I usually have a burger there simply because I can get it well done. The place usually fills up at lunch and dinner. Make a reservation or get there early/late. The lobby of the Hilton is also a cool place to watch people.
