Ingredients

chopped stick of celery
750g (1½lb) quartered ripe tomatoes
400g (13oz) can of chopped tomatoes
Directions

Sauté the onion, celery, garlic and tomatoes in a little oil5-6

Add the can of chopped tomatoes and chicken stock and simmer for 30 minutes.

. Purée in batches in a blender. Season and serve garnished with chopped basil and a drizzle of extra virgin olive oil.
