Description:

This is an Indian dish which can be served with boiled rice, white or brown, and sprinkled with toasted nuts. It is good for using leftover cooked cabbage.

Ingredients

* 1 small cabbage, shredded, either raw or lightly cooked
* 1 medium onion, finely chopped.
* 4 mild chillies, sliced
* 1 tsp ground cumin seed
* 1 tsp ground coriander seed
* 1 clove garlic, chopped.
* 1 tbsp desiccated coconut
* A little lemon juice or vinegar
* 1 tsp of sugar.
* Salt.

Directions

1.
1. Fry the onion and garlic till light brown in a large pan.
2.
2. Add the cumin and coriander and fry gently for a minute or so.
3.
3. Add the cabbage, chillis, and coconut and stir fry until cooked through and the cabbage (if raw) has become tender.
4.
4. Add a squeeze of lemon juice or dash of vinegar and a scant teaspoon of sugar.
5.
5. Stir through, and serve hot with the boiled rice.
6.
6. Sprinkle if liked with toasted nuts. .
