Funnel Cakes

Ingredients
1 cup of pancake mix
3/4 cup of water
small frying pan with about 2 inches of vegetable oil
Confectioner's sugar
clean funnel

Cooking Instructions
Step 1 Heat the oil on medium (to reduce splattering)
Step 2 In a bowl, combine the 1 cup of pancake mix (any brand will do) and 3/4 cup of vegtable oil
Step 3 Mix until all lumps are gone
Step 4 (this part you may need two people)
Step 5 pour batter into funnel over oil to make cross hatch design
Step 6 Fry on medium high for 3 minutes or until golden brown
Step 7 when desired color is reached, flip and fry fr an additional 3 minutes.
Step 8 Remove from oil and place onto a plate lined with paper towels to remove excess oil.
Step 9 **While hot top with sugar, serve when cooled slightly and enjoy! Smile
