You will find these at every Italian Festival. Sprinkle them with either cinnamon sugar or with powder sugar for the ultimate treat.




20 minutes


3 T sugar
1 stick butter
1/4 tsp salt
1 C water
1 C all-purpose flour
4 eggs
3/4 tbsp vanilla extract
Olive oil, for frying
1/2 C sugar mixed with 2 T ground cinnamon or 1/2 C powder sugar

Cooking Instructions
Step 1 In a medium saucepan combine the butter, salt, 3 tablespoons of sugar, and water over medium heat.
Step 2 Bring to a boil.
Step 3 Take pan off the heat and stir in the flour.
Step 4 Return pan to the heat and stir continuously until mixture forms a ball, about 3 to 5 minutes.
Step 5 Transfer the flour mixture to a medium bowl.
Step 6 Add vanilla extract.
Step 7 Using an electric hand mixer on low speed, add eggs, 1 at a time, incorporating each egg completely before adding the next.
Step 8 Beat until smooth.
Step 9 Pour enough oil into a large frying pan to reach a depth of two inches.
Step 10 Heat the oil over medium heat until it reaches 375 F (be very careful not to burn yourself (having a deep fry thermomether helps to make sure temperature stays constant.
Step 11 Using a small spoon, carefully drop about a tablespoon of the dough into the hot oil, frying in batches.
Step 12 The zeppole will immediately float to the top and puff up. Turn the zeppole once or twice with a slotted spoon, cooking until golden and puffed up, about 5 minutes.
Step 13 Drain on paper towels. Toss with cinnamon sugar mix or dust with powder sugar.
