Summer Recipes: Helen and Lisa Tse’s Chicken Fried Rice

Sweet Mandarin won Gordon Ramsay's Best Local Chinese restaurant on Channel 4's The F Word, beating 10,000 other restaurants. Now the entrepreneurial sisters behind Sweet Mandarin, Helen and Lisa Tse are stepping up the game by publishing their fist cookbook "Sweet Mandarin Cookbook," featuring a diverse range of traditional and adapted Chinese dishes. Their success doesn't stop there. Available in major supermarkets worldwide, their gluten-free, Kosher, and vegan sauces without the extremely avoided monosodium glutamate (MSG) secured praise and investment offers on BBC's Dragon's Den. Helen Tse is the first British-born Chinese author hailed as an up and coming literary talent for her memoir, Sweet Mandarin, which is distributed to 33 countries, won her an honorary doctorate, and was optioned for a feature film. Lisa Tse is the executive chef of their award-winning Sweet Mandarin restaurant. She works with schools and colleges as guest lecturer, as well as teaching food tech master classes. Helen and Lisa were kind enough to give us a peek at one of the recipes featured on "Sweet Mandarin Cookbook." One recipe called, "Dad's Chicken Fried Rice," was their father's favorite dish. It's an honor that the sisters shared the recipe with us for it's a recipe that is close to their hearts and goes way back to the humble beginnings of what is now the successful Sweet Mandarin Restaurant. Dad's Chicken Fried Rice 2 tablespoons vegetable oil 1 egg, beaten 200g cooled boiled rice 200g cooked chicken, sliced 30g peas or sweetcorn 1 teaspoon salt a drop of light soy sauce Method 1. In a hot wok, add the oil and scramble the egg. 2. Add the cooled boiled rice, reduce the heat to low and pat out the grains that have stuck together. 3. Once the rice is separated then scoop onto a plate and set aside. 4. Clean the wok and return to heat and add 1 tablespoon of vegetable oil. 5. Add the cooked chicken slices and peas or sweetcorn and cook for 5 minutes. 6. Return the cooked egg fried rice to the wok and toss to mix it all together and cook for a further 5 minutes. 7.
