Tommaso Roncari: Simple ingredients, perfectly balanced with each other” that’s what rustic Italian cooking is all about. Alfio’s recipes use familiar ingredients but are also modern, offering a subtle element of surprise through interesting flavor pairings and the use of a wide range of produce and Italian pantry staples. There is a festive vibe to the recipes and textthis is food to share in a casual setting with family and friends. Wine pairings are offered for every recipe, adding to the convivial feeling of the book.

Tommaso: The food, ambience, the vibe. People love the music we play at the restaurant and the feeling of being comfortable and having fun. We dance, sing, drink, and enjoy.
FE: Have you won any Awards?
Tommaso: The Italian Chamber gave us an oboe for being one of the most authentic Italian restaurants in the world.
FE: What is your restaurant philosophy?
Tommaso: Great customer service, make everyone in the restaurant happy and feel like they’re at home.

Tommaso: I will say tonnarelli Cacio e Pepe because people love fresh pasta and white sauce!
FE: Does your bartender make any amazing cocktails?
Tommaso: All different types, especially an Old Fashion.
FE: By any chance do you offer deals or specials?
Tommaso: We have a wine night on Wednesday nights, 20% off on bottles of wine. We are starting our brunch next month and our Italian Happy Hour is coming soon!
