After working with Emeril for over 11 years at his restaurants in Las Vegas and on the East coast, Chef Ronnie Rainwater was tapped to become the next chef de cuisine of Delmonico Steakhouse. Today, he leads the kitchen at Delmonico and oversees all facets of its culinary operations, from sourcing products, to managing the restaurant’s in-house dry-aging program for prime U.S.D.A. beef, to crafting ambitious nightly tasting menus for guests at his kitchen table.

FriendsEAT: Tell us a little something about Delmonico Steakhouse. What makes it special?
Chef Ronnie Rainwater: Delmonico Steakhouse is Chef Emeril Lagasse’s take on the grand American steakhouse. The restaurant brings back a time when lunch was an event, cocktail hour was not to be missed and dinner with friends was a celebration. At Delmonico Steakhouse, we remember. FE: Tell us a cool story about the restaurant.
Chef Ronnie: Delmonico Steakhouse at The Venetian has been open since the hotel’s opening over 17 years ago. This is a great accomplishment for a steakhouse in Las Vegas!
FE: Are there any awards you have received that you’re particularly proud of?
Chef Ronnie: Wine Spectator’s “Grand Award” 12 years in a row!
FE: What is your restaurant philosophy?
Chef Ronnie: We use simple, seasonal ingredients. We try to achieve quality food, service and overall experience with each guest.

Dry-Aged Ribeye
FE: What is your most popular dish? Why do people love it?
Chef Ronnie: The most popular dish is the in-house dry-aged ribeye. Guests love quality beef that is treated right.
FE: What makes you stand out above the rest?
Chef Ronnie: Consistency. We are 17 years and still going. We provide a relationship with our guests and continue to receive repeat customers both local and non-local.

FE: And what is the one cocktail your bartender loves to make?
Chef Ronnie: We love to make anything our guests want. We love being creative yet simple and we feel our menu reflects that. But being a whisk(e)y house, we love making whisk(e)y cocktails! From classics such as Old Fashioned, Manhattan and Gold Rush to new modern like Penicillin, Paper Plane and our menu favorite, The New Father.
