We had a chance to talk to owner and empanada maker, Kendall Bajek, who shared with us a few tidbits about Empanada Mama, their food, concept, and business philosophy. Here’s what we learned:
FriendsEAT: Tell us a little something about your business.
Kendall Bajek: I spent the past six years of my life surrounded by South American culture while living in Miami and Buenos Aires. I developed a passion for Latin American food, and began learning authentic recipes and cooking methods from anyone that would invite me into their kitchen.
It was in Buenos Aires, that I learned the art of empanada making, but I knew that I could elevate this already delicious hand-pie into something more exciting by experimenting with non-traditional fillings. My culinary background, combined with my travel experiences in over 40 different countries, inspired me to create an assortment of unique empanadas and dipping sauces that encompass the flavors from a variety of cultures.
FE: What is your business philosophy? Is there something that everyone strives for with each action taken at your business?
Kendall Bajek: Empanada Mama pays homage to the different regions of Argentina and South America, while also offering tribute to other popular flavors from around the globe. It’s authentic with a Gringo twist!
Derived from the Spanish verb empanar, which literally means to wrap or coat in bread, an empanada is a delicious stuffed pastry that can be either baked or fried (although we’ve decided to bake ours in an effort to be more health conscious!). Empanadas can be filled with just about anything from meat, to veggies, and/or cheese. Our goal at Empanada Mama is to come up with the most creative and unique flavor combinations to elevate this South American hand-pie into something new, exciting, and dare we say…slightly Gringo?!?
FE: Are there any wwards you have received? Any you’re particularly proud of?
Kendall Bajek: We were the winner of ‘Best Lunch Spot’ on the 2016 Bucks Happening List.
