Chef Victor Boroda is the executive chef of Estérel, a beautiful and upscale French-Mediterranean restaurant situated at the Hotel Sofitel LA with full bar & craft cocktails. Their unique garden called le Jardin is the focal point of the space. We were able to interview Chef Victor to ask him about the food, concept, and their business philosophy at Esterel.

Chef Victor: California French Mediterranean restaurant with a focus on local produce.

FE: Are there any Awards you have received? Any you’re particularly proud of?

FE: What is your restaurant philosophy? Is there something that everyone strives for with each action taken at your restaurant?

Chef Victor: Our philosophy is centered around the multitude of local farmers and producers that we are so lucky and grateful to be working with. Take the product, do as little as possible to it, and offer it to our wonderful guests.

FE: What is your most popular dish? Why do people love it?

Chef Victor: Cauliflower steak. I think people love that dish because of its uniqueness. The fact a vegetable is served as a “steak” and the mysterious black onion oil really make this dish a standout

Chef Victor: Rest in Peas because it incorporates the unique savory element of fresh snap peas.

Chef Victor: We offer brunch on Saturdays and Sundays.
