Traditional southern green beans are found on Thanksgiving buffets at every home throughout the southern states. These beans are slow cooked with ham hock or bacon until they are tender and turn almost a grayish green in color. Don’t get me wrong, these beans are delicious, but this year I want to try something new. Even the green bean casserole is taking a back seat on our table this year and we are going to enjoy fresh, crisp green beans with unique flavors.
Roasting green beans in the oven is not only easy, but also adds a rich caramel flavor. Every time I serve Roasted Green Beans with Blue Cheese I make a double batch because my guests always enjoy a second helping. If you have smoked sea salt on hand, I highly recommend using it as a seasoning. The smoky flavor compliments the blue cheese and will be sure to impress your family.

Balsamic Roasted Green Beans and Shallots
The richness of the caramelized shallots add wonderful flavor to this dish and it is perfect for serving a large crowd.
PREP TIME 5 minutes
COOK TIME 20 minutes
YIELDS 4 servings
1 pound green beans, trimmed
6 large shallots, peeled and quartered
1/4 cup balsamic vinegar
2 tablespoons olive oil
FIRST Preheat oven to 400°F. On a rimmed baking sheet, toss beans and shallots with oil and vinegar; season with salt and pepper.
LAST Transfer pan to oven and roast until caramelized and tender, stirring occasionally, about 20 minutes. Season with freshly ground pepper and serve immediately.
